Your Granvia looks immaculate, congratulations on a sensible purchase.
I had some ideas on conversions when I purchased mine but have since changed my mind.
I did remove the 2 + 1 middle seats giving the bench seat full roaming ability (fully forward, fully back or in between) creating more space and saving some weight.
